Multi-channel baguette pans are specified around the number of loaves carried per tray and the way that tray loads into the bakery process. Channel count should be selected with target throughput, loaf spacing, tray footprint and available oven or rack width rather than treated as an isolated product label.

Loaf Spacing and Airflow
Channel center spacing, channel width, depth, end shape and perforation layout control the space between loaves and the open path around each channel. Buyers should provide the intended dough piece and finished loaf dimensions so channel geometry can be reviewed without assuming one standard pattern.
Tray Footprint and Loading Pattern
Higher channel count can increase loaves per loading cycle, but it also changes tray width, weight and handling. The usable oven opening, rack support width, loading direction, number of trays per level and clearance between adjacent trays should be confirmed before fixing the layout.
